Voodoo dolls and graveyard greetings

Today we had another Pre-Halloween dinner. This time I made Voodoo-Tamales dolls with rice.

My Tamales Recipes:

(For 9 small tamales)

meat filling:

350 g ground beef

1 large onion, chopped

1 Tbsp cornmeal

1 Tbsp water

1 Tbsp tomato paste

1 tsp chili powder

1 tsp garlic powder

1/2 tsp cumin

1/2 tsp salt

Mix all ingredients.

cornmeal dough:

1 1/4 cup cornmeal

1/2 tsp salt

1 egg

water

Mix first 3 ingredients and add water until the dough sticks together, so that you can shape it…

Divide both mixtures into 9 parts.

Form meat mixture into roll, cover it with cornmeal dough.

Wrap it in maize leaves, fix with yarn.

Put them in a large pan.

Sauce:

1 can yellow tomatoes

2 cans water

1 Tbsp chilipowder

1 1/2 Tbsp tomatoe paste

salt

Mix ingredients and pour over tamales.

Cook for 5 Minutesn, reduce heat and simmer for about 45 Min…

Serve with rice and decorate with cloves for the eyes and wooden picks for arms…

My sista made great tasty Fanta cupcakes for dessert:

The recipe for these cupcakes is a rather old one, our Aunt, who lived far away, used to make the cake version of it, when we came to visit her and our uncle. She made much better cakes than our Mum (:O) and one day she gave us a handwritten book with all her recipes as a present. That must have been at least 25 years ago, since then my uncle and her got divorced and I haven’t seen her for years, but we still have her recipes…..it’s really strange, I have so many recipes which will always be connected with the person I got it from, I have recipes from old neighbors, who have died long time ago, old school friends I haven’t seen for decades, relatives, even from my friend’s Mums at the Kindergarten…

So no more talks, just recipes!!

Fanta Cake:

4 eggs

300g sugar

1 Tbsp vanilla essence

1 cup oil

1 cup orange flavered Fanta

350g flour

2 tsp baking soda

Mix all ingredients well and pour on a baking sheet

Bake at 400°F for 20-30 Min.

Topping:

600 g sour cream

400 g whipped cream, very stiff

2 pck. vanilla sugar

cinnamon

Mix first 3 ingredients, pour it on cool cake and dust with lots of cinnamon.

And to bring some spooky Halloween atmosphere to you I want to end this post with a shot from a nearby graveyard.
