Mum’s the best, or at least her beignets are…

Looking for the best beignets in town? Then come to Lenny’s Diner, because Lenny’s Mum is famous for the softest and sweetest ones around!!

And for those too far away to get one of these fresh, warm pillows, here’s the special recipe for

Lenny’s Mum’s original Mardi Gras Beignets

1/2 cup shortening

1/2 cup sugar

2 pcks dry yeast

6 1/2 cups all purpose flour

1 tsp salt

1 cup evaporated milk

2 eggs, well beaten

Cream together shortening, sugar and salt. Add 1 cup boiling water and 1 cup evap. milk. Set aside.

Dissolve yeast in 1/4 cup warm water, add this and eggs to the sugar-milk mixture and mix well. Add 3 1/2 cups flour and beat with a wooden spoon, add another 3 cups flour and mix well. Let it rise.

Roll out dough 1/4 inch thick and cut into 3 inches squares, cut a slit.

Fry in deep fat.

On the picture you can see the Bavarian shape of the so-called Ausgezogenen, our round shaped and huge beignets….

With these beignets on his Menu Lenny can sleep soundly…
