A short note on Plain Jane Cookies and French regrets

Here’s another quick and easy recipe for you, nothing spectacular.

Energy cookies,which I made for this year’s Valentine

400 g spelt flour

200 g butter

150 g raw sugar

200 g ground almonds

2 eggs

1 tsp orange extract

1/2 tsp salt

water

Mix all ingredients and knead them well -the dough will be a bit crumbly unless you add some water to make it smooth – roll it out (about 1/8 inch), cut out fancy shapes and bake at 350°F for about 20 minutes or until golden brown.

These cookies aren’t very extravagant or good looking, but they have a fine aroma, which develops slowly while you chew them.

And now I’m really in a dilemma.

I’ve planned to make French Coq au vin for next weekend, because I wanted to make it some day and I think it’s kinda Winter food, so it’s the last chance. But it’s Fasching/Mardi Gras and we have decorated for New Orleans Mardi Gras and there a Jambalaya (which I also haven’t cooked for decades) would be the right meal……but I planned the coq….V_v I love both……
