Pie is the Path to the Outsize

So I hope you also had a nice Star Wars day or (in my case) weekend.

Our Star Wars weekend was very springlike!

We had green asparagus with smoked salmon and eggs:

And a Whiskey Mai Tai (I had no rum around):

With a Grenadine Darth Vader Ice Cube!

And we ended our dinner with a fresh and sweet rhubarb pie, a pie I really like for the tasty thick crust and its crisp crumbles:) And the heavy sweetness of the oat crumbles fit perfectly with the fresh and sour taste of the rhubarb….

So here is the recipe for Rhubarb Pie

For the crust:

200 g butter

400 g flour

130 g powdered sugar

1 egg

Mix well, put in the fridge for 30 Min.

700 g rhubarb cut in 1/2 inch pieces

50 ml water

2 Tbsp flour

150 g sugar

While chilling your crust you can cook the rhubarb with the water, drain off the liquid and mix with flour and sugar.

60 g butter

120 g sugar

1/s tsp cinnamon

60 g flour

60 g rolled oats

Mix with your fingers, but don’t overdo it and crumble dough over crust and filling

Bake at 375°F for 45 Min.

Sorry for the lame joke, but it had to be…………..

PS: Guess what we watched on Tv in the evening, ‘A New Hope’!
