Eat, sweat, love

I know I haven’t posted much this week so let’s look up what I have to tell you.

Hannibal had his birthday party! Officially I chose 24.7 as his birthday (it’s Punic Hannibal’s Birth year 247.) but due to his bad condition we decided to make him a birthday week…

Here you can see Coconut Chicken right out of the crockpot!!!

What you need for this? Not much:

1 chicken cut in pieces (yes, mine had three legs..)

2 onions

4 bell peppers

spring onions

1 can coconut milk

fresh cilantro

Rub the chicken with following seasoning:

1 tsb powdered garlic

1/2 tsp chili

1/2 tsp oregano

1/4 tsp salt

1/2 tsp turmeric

Brown the chicken in a large skillet, remove it and place it in the slow cooker. Now brown the onions and bell peppers, add them to the chicken.

Fill the slow cooker with a can of coconut milk and cilantro.

Cook on low for about 4 1/2 to 5 hours.

Season with salt and serve with tortillas or rice…

And this one is Caribbean Shrimp cocktail with fried bananas and bakes.

Caribbean Shrimp cocktail:

shrimps

colombo seasoning

mango

roma salad, shredded

1/2 cucumber

1 onion

melon

Heat oil in a pan, add colombo and stir, put in the shrimps and let them brown, cool

Chop all ingredients and mix everything together, use you hand and get dirty for this one!!

Dressing:

juice of one lime

2 cloves garlic

1/2 dried chili

1 tbsp vinegar

1 tsp salt or maybe more…just try it

Mix and pour over salad, mix again and put it in the refrigerator for at least 3 hours.

Caribbean bakes:

500 g flour

200 ml warm water

1 Tbsp dry yeast

1/2 Tbsp baking soda

1 Tbsp butter

1/2 Tbsp coconut oil

3/4 tsp salt

1/2 Tbsp sugar

Solve yeast and baking soda in water, mix all ingredients and let it rise on a warm place for about 3 hours.

Divide into small balls, flatten them and brown them in a pan or on the grill (should be very hot) on both sides…
